Healthy White Christmas

Ingredients
¾ cup cacao butter
½ cup coconut oil
2 tsp vanilla extract
1 ½ cups shredded coconut
Option - to sweeten you can add 1-2 tbsp maple syrup
½ cup organic cranberries (we have these with no preservatives)
1/3 cup pepitas
½ cup macadamias
½ cup goji berries
1/3 cup cacao nibs
Method
1. Combine cacao butter and coconut oil (sweetener if needed), in a glass heatproof bowl or metal bowl, place over pot of simmering water (don't sit in the water), stir until it melts.
2. Remove from heat and add coconut, cranberries, pepitas, macadamias, nibs, pepitas & goji's in a bowl and combine.   Add the cacao butter mixture and stir to combine.
3. Pour mixture into a square baking tray (18-20cm) and use a spoon to press mix firmly down.  Put into fridge overnight.  
4. Cut into squares or rectangles and serve! Store in an airtight container in the fridge.
